Would it be possible to add https://i18n.kacperkasper.pl/projects as a link to i18n.haiku-os.org so it can be easier to find?

Sure? I see no harm in 'advertising' the site for 3rd party app translations. More so, as it hosts projects that are bundled with Haiku releases.

i18n.haiku-os.org's homepage is just supposed to be a "landing" page of sorts for the services actually hosted on that subdomain. Adding a link to the site to one of the pages on www.haiku-os.org sounds like a better idea.

Then we're all set. Polyglot's already linked from https://www.haiku-os.org/community/getting-involved/

No, as it is a third-party site, and that site is for translating Haiku itself.
