Hi,
I attempted to boot Haiku on my HP laptop (model 14s-dk0xxx), but I was unable to move my mouse.

If this is a detachable mouse, can you remove, wait a bit, and plug it back in a few times? Additionally, can you please get the output of "listdev" and "listusb"?

I just started work, so when I get home, I'll provide these to you.
And I'm using the trackpad for the laptop.

Actually, your mouse problem seems to be unrelated to USB:
KERN: Elantech version 5D4F01, under developement! Using fallback. KERN: ps2: probe_mouse Standard PS/2 mouse found
This is #15729.
Can you use USB on this machine? If so, the errors may be a "fluke" (or related to the Webcam or the like which we do not yet utilize.)

Putting in a USB drive works just fine. So it's definitely not that.
Also, is this a problem with just the Elantech trackpad I have?

Yes, the touchpad not working seems to be a duplicate of the Elantech ticket, and the not responding internal devices is reported elswhere (and may not be a problem on our end.) So subscribe to the ticket I linked above for the touchpad issues; closing this as a duplicate.
